I pack sprouted moong salad a lot — I sprout a batch on the weekend, then toss a cup with chopped onion, tomato, cilantro, green chilli, salt and a pinch of chaat masala. It keeps fine in a sealed tiffin for a full workday and still tastes okay cold (chewy, not soggy). Cheap, quick, and I don’t have to cook a separate “fitness” meal. Little tip: keep lemon/dressing separate or add right before eating if you want it extra fresh.
