Quick, filling regional tubers for late dinners — what's your go-to and how do you make it?

After a long commute or a late shift, I want something warm, simple and not too heavy. Different regions reach for roasted sweet potato, steamed arbi, boiled suran, baked yam or alu bhorta. Which tuber do you turn to when time is short, and what's your 10–15 minute way to make it satisfying (keeping it light, not greasy)?

Choose steamed/boiled over fried: sweet potato, yam (suran), arbi/colocasia and regular potato all work. Microwave whole small sweet potatoes or diced yam for ~6–10 minutes (slice to cut time); thin slices/coins steam in 8–10 minutes. Parboil arbi/suran fully to remove itchiness (calcium oxalate) and add a pinch of hing/asafoetida while cooking to ease digestion. Keep it light and satisfying by adding a small protein/fat: plain yogurt or a spoon of roasted peanut-chana chaat, plus lemon, roasted cumin and fresh coriander. This lowers post-meal glycaemic impact and reduces heaviness without frying.
