I do a quick “roti-upma” when mornings are hectic: tear 2–3 rotis into bite-sized pieces, heat a tbsp ghee or oil, pop a pinch of mustard seeds and curry leaves (or skip), sauté a chopped onion or scallion if you have one, then toss in the torn rotis and any leftover sabzi. Splash a couple of tablespoons of water, cover for 2–3 minutes to steam, finish with lemon and chopped cilantro. Takes about 7–10 minutes and feels breakfast-y rather than reheated dinner. If you want extra staying power, stir in a spoonful of crushed peanuts or some crumbled paneer/soft cheese at the end.
