My go-to is khichdi — super forgiving, one-pot, and actually packs nicely for the next day. I keep a jar with a 1:1 mix of rice and moong dal, throw in a handful of frozen mixed veggies, a pinch of turmeric + hing, a tsp of ghee and salt, pressure-cook for 2 whistles and it's done in ~20 minutes. For the tiffin I add a small tub of yogurt and a store-bought pickle or roasted papad for crunch. Shortcuts that help: frozen veg, pre-mixed rice+dals in a jar, and microwave chapatis or ready-to-eat dal packets if I'm completely wiped. Comforting, quick, and reasonably balanced for low-energy days.
