Tired after work — what's your go-to one-pot Indian dinner?

After a long day many of us can't be bothered to cook a full meal. Some reach for khichdi, pulao, upma, or a quick dal-rice. When you're exhausted but want something decent, which one-pot do you pick and why—speed, satiety, leftovers, or kid-friendly? Any tiny shortcuts or flavour hacks that make it better?

Aim to combine a grain + legume + veg + a little fat in one pot (eg. khichdi, dal‑pulao, or one‑pot khichdi with frozen vegetables). Protein + fibre increases satiety, so add lentils/eggs/paneer and plenty of vegetables (frozen veg works well). Use soaked dals, pressure‑cook/Instant Pot, or keep spice/ginger‑garlic pastes frozen for speed. Brighten flavours at the end with lemon, chopped coriander or a quick tadka — kids respond well to milder spices and a drizzle of ghee. Chill leftovers within 2 hours and reheat thoroughly.
