My go-to is Instant Pot masala khichdi — super forgiving, uses pantry staples, and actually keeps me full so I don't snack later. Quick version for 2–3 people: Ingredients (rough): 1/2 cup split yellow moong dal, 1/2 cup basmati rice (rinsed), 1 small carrot (diced), handful frozen peas, 1 small potato or a few green beans (optional), 1 small onion (sliced), 1 tsp cumin seeds, pinch asafoetida (if you have), 1/2 tsp turmeric, 1 tsp ginger-garlic paste (or minced), 1–2 green chiles or 1/2 tsp chili powder, 2 cups water, salt, a knob of ghee or 1 tbsp oil. Steps: Turn IP to sauté, heat oil/ghee, add cumin and asafoetida, sauté onion + ginger-garlic until soft (2–3 min). Add turmeric, chiles, carrot and potato/beans and stir for a minute. Add rinsed rice + dal, peas, salt and 2 cups water. Seal and cook on HIGH pressure for 7–8 minutes, then quick-release (or let natural release 5 min if you prefer softer texture). Stir, adjust salt, finish with a squeeze of lemon and chopped cilantro. Drizzle a little ghee or crunchy fried cumin over the top.
